Go to your linux platform, create identical email accounts as your previous webhost.

Get the static IP of your previous webhost by ping or whois. Check mail with direct IP to verify it is working.

Then, do the usual stuff of changing the DNS to the new webhost.

During propagation process, some mail will be drop in your previous webhost. You have the IP, you can still check.
